Moustalevria – A Greek Creamy Grape Juice Pudding

The production of wine is a tradition in Greece especially throughout the islands. The end of September is the grape harvesting season. After the harvest and pressing of the grapes, some of juice is used to prepare this gelatinous pudding.

Ingredients

  • 8 cups fresh grape juice
  • 8 tablespoons corn starch
  • 1 tablespoon cinnamon and some more for sprinkling on top
  • 2 tablespoons sesame seeds and some more for sprinkling on top
  • ¾ cup roughly crushed almonds and some more for sprinkling on top

Instructions

  • In a large pot pour 7 cups of the grape juice and boil about 30 minutes skimming the foam from time to time as the mixture boils.
  • Remove pot from heat then sieve the mixture through a fine mesh. In the remaining cup of grape juice, whisk in the corn starch.
  • Mix it well.
  • Then add the cup’s contents to the strained mixture.
  • Add the cinnamon and boil under low heat until it is creamy.
  • Now remove from the heat, and slowly stir in the sesame seeds and almonds.
  • Serving: Scope mixture into small bowls, and sprinkle cinnamon, sesame and almonds on top.
  • Set aside to cool.
  • Cover with plastic wrap before placing bowls in refrigerator.
