Succulent Syros Seafood Rice – Part 1

A Zesty Mediterranean Entrée.

Ingredients

  • 2 tablespoons Olive oil 2 tablespoons butter.
  • 1 piece of fresh ginger ½ inch long 1shallot, 2 cloves garlic - minced
  • 2 cups of long grain rice
  • 1 tablespoon cardamom seeds
  • 1 teaspoon turmeric
  • 1 teaspoon saffron
  • 1 cup dry white wine
  • 4 cups of fish stock
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • In a stew pot put oil and butter over medium heat.
  • Add minced ginger, shallot and garlic and stir for 1 minute.
  • Add turmeric, saffron and rice and sauté for 2 minutes.
  • Add the cardamom seeds and wine.
  • Let it cook for 4-5 minutes stirring occasionally.
  • Add the fish stock and let simmer for 20 minutes (depending on directions of rice)
  • Cover with a kitchen towel and keep warm.
